Ingredients

olive oil

1/2 onion, chopped

1 lb. italian sausage

1 T. tomato paste

1/2 cup chopped fresh parsley

1/4 cup chopped fresh cilantro

2 c. chicken broth

1 can chick peas, drained

10 oz. frozen spinach

salt and pepper

Preparation

heat oil in medium saucepan. sauté onion until soft. add sausage. crumble and cook until browned. add tomato paste, parsley, cilantro, broth and chickpeas. bring to a boil and add frozen spinach. simmer ten minutes. salt and pepper to taste. serve with sliced baguettes.
