Ingredients
2 chopped chicken cutlets
Flour
1 tbsp. olive oil
1 tbsp. butter
1 chopped onion
5 cloves chopped garlic
2 sliced bell peppers
Red pepper flakes
1 cup white wine
1 tbsp cornstarch
1 package fresh fettucine
1 cup pasta water
1 package sliced mushrooms
Nutmeg
Parsley
1/2 cup skim milk
Preparation
Boil pot of water.
Dredge chicken pieces in flour.
Heat olive oil 1 minute. Cook chicken pieces 7 minutes and remove.
Melt butter in pan. Add onion, garlic, peppers, and pepper flakes. Cook 10 minutes.
Add wine and cornstarch. Boil 1 minute.
Add chicken and simmer 15 minutes.
Cook fettucine as per instructions. Remove and add to pan. Stir in milk, pasta water, and sliced mushrooms. Cook 5 minutes. Top with nutmeg and parsley.
