Ingredients
1 C quinoa, rinsed
2 C shredded chicken
1 Orange, peeled and chopped
1 Avocado, peeled and diced
1/4 C finely chopped purple onion
cilantro - one handful, torn
dressing
1/4 C canola oil
2-3 Tbsp lime juice
1 tsp Dijon
1 tsp honey
1/4 tsp curry powder
Preparation
Boil quinoi in a covered pot for about 12 minutes or until tender. Drain, cover with a tea towel and let cool. Put next 5 ingredients in a large salad bowl, and then mix up the dressing ingredients. Mix in the quinoa, drizzle with the dressing and top with toasted almonds
