2 large spanish onions, thinly sliced

3 garlic cloves, 2 smashed and peeled, 1 minced

1 cup dry marsala

1/2 cup veal stock, or store bought low-sodium beef stock

1 rosemary sprig

Freshly ground black pepper

2 to 3 oil-packed anchovy fillets, coarsely chopped

2 tablespoons capers, soaked in warm water for 5 minutes and drained

1 cup dry white wine

Extra virgin olive oil

16 crostini

1 tablespoon minced fresh chives
