Ingredients

4 pieces Boneless, skinless chicken tenderloins

1 teaspoon Extra virgin olive oil

1 teaspoon Italian seasoning

1 pinch Salt

1 pinch Ground black pepper

1 cup Whole wheat rotini pasta

1 Honey crisp apple, cut into thin slices

1/4 cup Shredded mozzarella cheese

Preparation

Bring 2 cups water to a boil in small pot

Heat olive oil in large frying pan over medium heat

Cut chicken tenderloins into 1 inch cubes

Add whole wheat pasta to boiling water, lower to a simmer, let cook for 10-12 minutes

Add chicken cubes to frying pan, stir occasionally

Add salt, pepper and Italian seasoning to chicken, stir to combine

Once chicken is almost cooked through, add apple slices and let cook for 3-4 minutes

Drain pasta, put 1/2 on each plate

Sprinkle 1/2 mozzarella on each plate of pasta

Top with chicken and apple slices

Enjoy immediately!
