Ingredients

4 poblanos
cheese
4 eggs
1/2 tsp kosher salt
1 c veg oil
Preparation
Cut peppers lengthwise and across the top to form a “T”. scoop out insides. Broil peppers (10 min) and peel. Season salt and pepper inside and out. Stuff peppers w cheese. Whisk egg yolk until light and frothy, set aside. Beat egg whites into peaks. Combine with egg yolk. Heat oil. Scoop 1/2 cup batter in oil. Place stuffed pepper on batter. Scoop 1/2 c. batter on top. Cook until golden brown, turn over and cook again. Enhance with Salsa.
