Ingredients

1 cup uncooked long grain brown rice

2 cups water

1 Tbsp. olive oil

1/4 bunch cilantro, minced

1 Tbsp. lime juice

Kosher salt to taste

Preparation

  1. Place rice, water, and oil in a medium saucepan with a tight-fitting lid. Bring to a boil. Reduce heat to low and simmer for 45-50 minutes until liquid has been absorbed.

  2. Remove from heat and let stand for 5 minutes. Transfer rice to a large bowl and stir in minced cilantro, lime juice, and salt to taste.
