Ingredients

1 stick Cinnamon Ceylon Stick, six- inch long

Preparation

Place 3.25 cups of water in pot or glass kettle.

Break the cinnamon stick into 4 pieces & put into water. Close lid.

Set the heat to medium to low. Bring the water into a SLOW BOIL for 25 minutes (cinnamon needs to be slowly boiled to extract full flavor). Boiling fast will not work. You will notice the color of the water is pale yellow.

Once the water starts bubbling, remove pot from heat and let water cool off for 15 to 20 minutes. Once the temperature drops, the color will change from pale into red.
