Ingredients
1-1/4 c. milk
1/3 c. sugar
1 T. vanilla
3 eggs
2/3 c. flour
1/8 t. salt
fruit (cherries, berries, plums, etc.)
Preparation
Preheat oven to 375 F.
Blend all ingredients EXCEPT fruit for 1 min. at top speed. Pour ¼ of batter in buttered pan. Bake 2 mins. Lower oven temp to 350 F. Spread fruit over batter already in pan. Pour rest of batter over fruit. Bake 1 to 1-1/2 hours until knife comes out clean.
May be eaten warm, fresh from the oven or refrigerator cool.
