Ingredients

• 1-1/4 c. milk

• 1/3 c. sugar

• 1 T. vanilla

• 3 eggs

• 2/3 c. flour

• 1/8 t. salt

• fruit (cherries, berries, plums, etc.)

Preparation

Preheat oven to 375 F.

• Blend all ingredients EXCEPT fruit for 1 min. at top speed. • Pour ¼ of batter in buttered pan. • Bake 2 mins. • Lower oven temp to 350 F. • Spread fruit over batter already in pan. • Pour rest of batter over fruit. • Bake 1 to 1-1/2 hours until knife comes out clean.

May be eaten warm, fresh from the oven or refrigerator cool.
