Ingredients

2 slices of bacon diced

1 medium onion chopped

2 medium potatoes peeled and cubed

2 cans (6 1/2 oz. ea.) minced clams

1/4 flour

1 pint on-fat half and half

1/8 teas white pepper

1/2 teas salt

1/4 cup butter, melted

Preparation

In 3 quart micro proof casserole, cook bacon on high for 3 minutes. Stir in onion and potatoes and cook covered on 90 (sauté) for 8 to 10 minutes until potatoes are cooked. In a 2 cup glass measuring cup melt butter on high for 1 min. Stir in flour and then add to potato onion mixture, mixing well. Stir in the rest of ingredients including clam juice . Cover and cook on high for 5 minutes until hot. Stir at least once during cooking.
