Ingredients
1/3 cup pecans, coarsely chopped
¼ cup shredded coconut
2 tbs slivered almonds
1 ½ tbs pepitas
1-½ tbs sunflower seeds
½ tsp cinnamon
1/8 tsp nutmeg
pinch of ground all spice
1/3 cup raisins
2 cups rolled oats
2 tbs melted butter, still hot
3 tsp organic honey
2tsp brown sugar
1tsp vanilla extract
Preparation
- combine oats, nuts, seeds, coconut and spices in large mixing bowl, set aside.
- While butter is still warm mix with vanilla, sugar and honey until sugar dissolves and forms a rich syrup
- Poor syrup over oat mixture, stir to combine evenly
- Spread the mixture onto a baking tin with rim, ensuring it is evenly spread in a thin layer.
- Place into preheated oven for 12 minutes
- Remove from oven, stir granola to lightly breakup and reveal uncooked oats
- Places back in oven for a further 5 min
- Remove and let cool.
- Serve with yogurt, milk and cherries.
