Ingredients

1/3 cup pecans, coarsely chopped

¼ cup shredded coconut

2 tbs slivered almonds

1 ½ tbs pepitas

1-½ tbs sunflower seeds

½ tsp cinnamon

1/8 tsp nutmeg

pinch of ground all spice

1/3 cup raisins

2 cups rolled oats

2 tbs melted butter, still hot

3 tsp organic honey

2tsp brown sugar

1tsp vanilla extract

Preparation

  1. combine oats, nuts, seeds, coconut and spices in large mixing bowl, set aside.
  2. While butter is still warm mix with vanilla, sugar and honey until sugar dissolves and forms a rich syrup
  3. Poor syrup over oat mixture, stir to combine evenly
  4. Spread the mixture onto a baking tin with rim, ensuring it is evenly spread in a thin layer.
  5. Place into preheated oven for 12 minutes
  6. Remove from oven, stir granola to lightly breakup and reveal uncooked oats
  7. Places back in oven for a further 5 min
  8. Remove and let cool.
  9. Serve with yogurt, milk and cherries.
