Ingredients
1 pound 1" Cubed Chicken or Pork
2 tablespoons Butter
1/2 head Fine Chopped Onion
2 tablespoons Fine Chopped Garlic
1 teaspoon Ground Cinnamon
1 teaspoon Ground Corriander
1 teaspoon Ground Cumin
1/2 teaspoon Ground Cayenne
1/2 teaspoon Tumeric
6 ounces Diced Tomatoes
2/3 can Coconut Milk
1 teaspoon Paprika
1 tablespoon Salt
Preparation
Heat a pot and melt the butter.
Fry the onions and garlic for 3 minutes.
Add the Cinnamon, Chili Powder, Coriander, Cumin, Salt and Turmeric, stir and fry for 2 minutes.
Add the pork and cook for 3 minutes stirring to coat the meat with the spices.
Add the drained tomato mix well and add Coconut Milk and paprika.
Cover pot and cook on low heat till the meat is tender, approx 30 minutes.
