Ingredients

0.5 tbsp. Brown sugar

Juice of 1 lime

3/4 tsp. red curry paste

1/2 Can light Coconut milk

3/4 lb. Salmon

1 tsp. Kosher salt

1 tbsp. fresh cilantro

2 tsp. Sesame Oil

12 oz. snow peas.

1 tsp. Rice Vinegar

1 tsp. Toasted Sesame Seeds

1 cup uncooked rice.

Preparation

  1. Mix brown sugar, lime juice, red curry paste, coconut milk in large skillet. Stir to combine.
  2. Bring to a simmer, add fish. Cover, reduce heat to medium-low, cook 10 minutes, turning fish once.
  3. Prepare rice.
  4. Remove fish, reduce sauce.
  5. In hot pan, toss snow peas, sesame oil, seeds and vinegar. Saute 3 minutes.
