Ingredients

1 cup long grain or jasmine rice

2 1/2 cups water

1 tsp kosher salt

1 tsp ground ginger

1/4 cup flaked sweetened coconut

1 tbsp coconut butter

1 jalepeno, finely chopped

1/2 cup chopped cilantro

Preparation

In a meduim saucepan, bring water to a boil. Add all ingredients except cilantro and bring to a simmer on low heat. Simmer for 20 minutes or until rice is tender and water is absorbed. Fold in cilantro and let stand 5 minutes. Add additional water if rice is too dry. Taste for salt and add if needed.

To serve, sprinkle with toasted coconut or chopped almonds.
