Ingredients

Chinese Egg Noodles – 1 Pound

Peanut Butter – 1/2 Cup

Soy Sauce – 3 Tablespoons

Sriracha Sauce – 3 Tablespoons

Rice Vinegar – 3 Tablespoons

Sesame Oil – 1 Tablespoon

Ginger – 1 Tablespoon (grated,peeled)

Red Bell Pepper – 1 (Chopped)

Cucumber – 1 (chopped)

Cilantro – 1/2 Cup (Chopped)

Salt – To taste

Preparation

  1. Cook 1 pound of Chinese Egg Noodles
  2. Drain & Rinse
  3. Whisk 1/2 Cup Peanut Butter
  4. Add Ingredients Soy Sauce - Ginger
  5. Toss with the noodles
  6. Toss in the red bell pepper and cucumber
  7. Add the chopped cilantro
  8. Season with salt
