Ingredients
SLOPPY JOES:
1 tbsp. olive oil
1 onion
1 green bell pepper
1 red bell pepper
5 garlic cloves
1 lb. ground turkey
Black pepper
1 28 oz can crushed tomatoes
Ketchup to taste
Mustard to taste
2 tbsp. brown sugar
2 tbsp. vinegar
Worcestershire sauce to taste
Tabasco to taste
BISCUITS
1 3/4 cup flour
3/4 cup cornmeal
4 tsp. baking powder
1 tsp. baking soda
1/2 stick butter, chopped
2 cups grated Cheddar cheese
3 tbsp. parmesan cheese
3 chopped scallions
1 container Greek yogurt, mixed with skim milk until it measures 1 1/3 cup
CHILI ADD-INS:
1 can beans
1 can corn
Tomato paste to taste
Chili powder to taste
Cumin
Red pepper flakes
1 chopped jalapeno
Preparation
Heat oil 1 minute.
Chop onion, peppers, and garlic in food processor. Add to oil and cook 12 minutes. Add turkey and cook 5 minutes. Drain pan. Stir in black pepper.
Add tomatoes, ketchup, mustard, sugar, vinegar, Worcestershire, and tabasco. Bring to a boil, and then simmer 30 minutes.
BISCUITS While sloppy joes are simmering, preheat oven to 450 degrees and lay parchment on a baking sheet.
Stir flour, cornmeal, baking powder and soda in a bowl. Blend butter in the food processor with the pastry blade. Gradually add in flour mixture.
Remove to a mixing bowl and stir in cheese, scallions, and yogurt.
Divide dough into 8 mounds and bake for 15 minutes. Serve with sloppy joes.
CHILI: Stir beans, corn, tomato paste, chili powder, cumin, red pepper flakes, and jalapeno into remaining sloppy joe mixture. Top with crumbled biscuits and bake for 30 minutes at 350 degrees.
