Ingredients

• 1 small red onion, chopped

• 1 or 2 red bell peppers

• 2 ears of roasted corn (slice kernels off cob) or 1 can of corn

• 1 can black beans, drained and rinsed

• ¾ cup chopped cilantro

• 3 tablespoons lime juice

• 1 ½ teaspoons salt

• ½ teaspoon fresh cracked pepper

• 1 avocado, cubed

Preparation

Dump everything into a bowl, mix and serve.

If possible mix everything other than the avocado in the bowl and chill for one hour before serving.
