Ingredients

5 T olive oil (divided)

1 T lime juice

¼ t salt

¼ t hot pepper sauce

1 ½ C corn (about 4 ears)

1 ½ C cherry tomatoes

½ C chopped cucumber

¼ C chopped red onion

2 T basil

¼ feta cheese

Preparation

  1. Mix 4 T olive oil, lime juice, salt, and pepper sauce.
  2. Cook and stir corn in olive oil.
  3. Add tomatoes, cucumbers, onion and basil.
  4. Drizzle dressing over the vegetables.
  5. Let stand for 10 minutes.
  6. Sprinkle with cheese. I double the vegetables, but not the dressing. Needs more salt.
