Ingredients
5 T olive oil (divided)
1 T lime juice
¼ t salt
¼ t hot pepper sauce
1 ½ C corn (about 4 ears)
1 ½ C cherry tomatoes
½ C chopped cucumber
¼ C chopped red onion
2 T basil
¼ feta cheese
Preparation
- Mix 4 T olive oil, lime juice, salt, and pepper sauce.
- Cook and stir corn in olive oil.
- Add tomatoes, cucumbers, onion and basil.
- Drizzle dressing over the vegetables.
- Let stand for 10 minutes.
- Sprinkle with cheese. I double the vegetables, but not the dressing. Needs more salt.
