Ingredients

2/3 pound catfish

2/3 cup cornmeal

2 teaspoons dried thyme

2 teaspoons paprika

1 teaspoon red pepper flakes

1 teaspoon ground black pepper

1 teaspoon salt

1 tablespoon vegetable oil

1 lemon

Preparation

Clean and dry fish

Mix cornmeal and spices

Dredge fish through spiced cornmeal, coating fish thoroughly

Fry fish in hot oil for 5-6 minutes on each side

Drizzle with juice of 1/2 lemon while frying

Serve with lemon wedges
