Ingredients

2 cups wholewheat couscous (cook in vegetable broth)

1 tin chickpeas drained

1/2 cup currants, pre-soaked

1 cup cherry tomatoes

2 carrots chopped

1 red pepper seeded and chopped

1/2 cucumber chopped

1/2 cup radishes

1/2 cup parsley chopped

1/3 cup mint chopped

1/4 cup chives

2 tspn grated lemon rind

1/2 cup feta on the side

Dressing

1 cup olive oil

6 tbsp lemon juice

2 tspn salt

fresh pepper

Preparation

  1. Cook couscous
  2. Chop vegetables and herbs
  3. Make salad dressing
