Ingredients
12 very small potatoes
1/2 cup olive oil
thyme
coarse salt
black pepper
garlic
Preparation
Gently smack potatoes until the skin begins to split. Over low heat, add olive oil to sauce pan, then add the garlic, potatoes, and seasonings. Cover. Shake pan every 5 minutes until the bottoms are browned - 10-12 minutes. Flip potatoes over and cook another 5 - 8 minutes. Remove lid and cook 2 - 3 more minutes, until condensation evaporates.
