Ingredients
2 grilled chicken breasts, sliced
200g/7oz fresh cranberries
150g/5oz walnuts, roughly chopped
1 small Iceberg lettuce, roughly chopped
1 Romaine lettuce, roughly chopped
For the dressing:
3tbsp olive oil
1tbsp lemon juice
1tbsp pure honey
salt

Preparation:
1.In a bowl, mix the Iceberg and Romaine lettuce. Add the cranberries and walnuts and mix well. 2.To prepare the dressing, in a separate bowl, whisk the dressing ingredients and pour over the salad. 3.Arrange the grilled chicken slices and decorate with some fresh herbs (whatever you have available at home, I used fresh mint leaves) and serve!
