Ingredients

2 pounds baking potatoes

2 teaspoons salt

3 tablespoons butter

4 ounces cream cheese

½ cup milk

salt and pepper

Preparation

Peel the potatoes and cut them into 1-inch cubes. Add the cut potatoes to a large pot and just cover with water. Add the salt and stir well. Bring to a boil and cook for 15 to 20 minutes or until the potatoes are tender when pierced with a fork. Drain the potatoes and return them to the pot. Add the butter, cream cheese, and milk and mix will with a hand mixer until the potatoes are smooth. Add salt and pepper to taste.
