Ingredients
4 pounds Yukon Gold Potato- cut in 1.5 in cubes
2 pound Parsnips- cut in 3/4 in cubes
1 quart Heavy Cream
1/2 pound Unsalted butter
1 teaspoon Salt
1 cup Water
1/4 teaspoon Freshly grated nutmeg
1/4 teaspoon white pepper
Preparation
Cube parsnips and potato
Bring water,Heavy cream, salt just to a boil
Add potatoes and parsnips- simmer 20-25 min (until tender)
Strain and reserve liquid
Use food mill or ricer to press potatoes and parsnips
Add butter and some of reserved liquid until creamy
Add grated nutmeg to taste
Add salt to taste
