Onion

1/2 tsp baking soda more or less to help prevent milk from curdling/scalding

Butter - fair amount for amount of potatoes, I’d use a half stick for three to four tennis ball-sized potatoes

Salt and pepper pretty good amount, especially pepper

Milk

Garlic powder - optional

Preparation

Cube potatoes about one inch cubes - peeled or not As much onion as you want to use, chopped Boil potatoes and onions in a sauce pan until potatoes are just done Pour off water - no need to strain Turn down heat add salt, pepper, baking soda and butter. Once butter is mostly melted, add milk to about 1/3 to 1/2 the depth of the potatoes in the sauce pan and cook until it starts to thicken. Add corn starch to thicken to a medium thick sauce. You may want to add more salt and pepper now and a little garlic if desired.
