Ingredients

3 lbs. new or fingerling potatoes

1/4 cup olive oil

3 T white wine vinegar

2 T mayonnaise

2 T spicy brown mustard

1 t salt

1/2 t pepper

2 sliced stalks of celery

1/4 c fresh dill

Preparation

Boil potatoes (halved if large) in a large pot of salted water until tender, 20-25 mins. Combine olive oil, vinegar, mayonnaise, mustard, salt and pepper in a large bowl. Add the potatoes and combine to toss. Let sit, tossing occasionally until dressing is absorbed, 8-10 mins. Add celery and fresh dill, toss to combine.
