Ingredients

1T salt

1C instant polenta

1/2C (2oz) grated Parmesan

4T unsalted butter

Preparation

Bring four cups of water and the salt to a boil in a sacepan. Stirring constantly, add in the polenta. Cook, stirring constantly, until the polenta thickens, about three minutes. Remove from the heat and stir in the parmesan and butter. Cover and set aside until the butter melts, about two minutes. Stir again before serving.
