Ingredients
1 cup Cream, half and half, milk or combination, heated just until warm
1/2 cup Emmenthal or other melting cheese, grated
1/4 cup Parmesan cheese, grated
Scant 1/4 or to taste teaspoon Cayenne pepper
3 tablespoons Chives, chopped fine
3 tablespoons Ham, diced fine
4 Eggs
Preparation
Heat oven to 325 degrees and set rack in middle. Put baking sheet in to warm up.
Combine all ingredients except chives, ham and butter until well blended
Butter ramekins and put on heated baking sheet.
Put 1/2 tablespoon each of diced ham and chives into each ramekin
Pour egg mixture into each ramekin
Bake 20-30 minutes until almost firm.
