Ingredients
3T olive oil
3lbs Pork shoulder (or more)
2 1/2 T flour
2 sweet potatoes
1 1/2 C chopped onions
6 garlic cloves, minced
1 1/2 C white wine
1/2 C red wine vinegar
3 T capers
4 C black beans (dried or from cans)
1 box corn, frozen (10-16 ozs)
1/2 C chopped parsley
1 C chopped cilantro
4 t cumin
1 t pepper (or more!)
1 T Chili sauce
Preparation
In a large skillet, brown meat in 2T olive oil, add flour and set aside. In large dutch oven sauté onions and garlic in 1T olive oil until translucent. combine all ingredients and cook until gender. Top with 1/4 C chopped cilantro. May be prepared 2 days in advance.
