Ingredients
1 cup short grain rice (Valencia or Arborio)
6 cups water
14oz can of sweetened condensed milk
1 tbsp butter
1 tsp sugar
1 cup milk
rind from 1/2 a lime
2 sticks of cinnamon
1/2 tsp salt
1/8 to 1/4 cup sugar
Preparation
Bring water and rice to boil in a pressure cooker. Cover and cook 15min at 10lbs. pressure. Decrease pressure slowly.
Meanwhile, bring 1 c. milk, lime rind, and cinnamon sticks to a slow boil.
Over low heat, add condensed milk to rice and stir. Then, add hot milk poured through a strainer and stir. Add remaining ingredients, tasting for the amount of sugar. Transfer to a serving dish, and chill for at least one hour before serving.
