Ingredients
1 1/2 cups seeded and finely chopped cuke
8 oz mild goat cheese
1 1/2 tsp grated fresh lemon zest
1 1/2 tsp fresh lemon jjuice
2 1/2 tsp finely chopped fresh tarragon leaves
2 tbsp. finely chopped red onion
1/2 tsp pepper
salt
Preparation
In food processor, puree 1 cup of the cuke with the goat cheese, lemon zest and lemon juice until almost smooth. In a bowl, stir together the goat cheese mixture, remaining cucumber, tarragon, 1 tbsp. of onion and s and p.
Garnish with remaining tbsp. of onion and serve with slices of soft, crusty bread
