Ingredients

3 large egg yolks

2 TBSP fresh lemon juice

1/2 tsp dry mustard

2 TBSP finely chopped fresh parsley

1 TBSP finely chopped fresh chives

1/2 cup chopped cucumber

3/4 cup butter, melted and kept hot

Preparation

In blender, process the egg yolks, lemon juice, mustard, parsley, chives and cucumber until smooth.

With machine running, slowly pour in the hot butter and process until the sauce thickens.

Serve immediately.
