Ingredients
3 cloves Garlic
1 Small Onion - finely chopped
1 Butternut Squash - cubed
1 1/2 tablespoons Curry Powder
1/4 teaspoon Cinnamon
14oz Coconut Milk
2 cups Vegetable Broth
Preparation
Sauté garlic and onion in olive oil until onion is soft - about 5min
Add butternut squash and continue to sauté until soft - about 10min
Add curry powder and cinnamon to coat
Add a pinch of salt and pepper to taste
Pour in vegetable broth and coconut milk. Bring to a boil over high heat. Reduce heat to low and simmer for 20-25min.
