Ingredients

2 c. cooked diced chicken

3-5 c. cooked brown rice

1 stalk celery, chopped

1 medium onion, chopped

2 medium carrots, chopped

1 medium apple, chopped

2 T. oil

2 t. curry powder

1 c. chicken stock

1 c. milk

Salt & pepper

Preparation

  1. Saute celery, onion, carrots and apple in oil for 5 minutes. Mix with remaining ingredients.
  2. Spread mix in a lightly oiled 9x13 pan. Sprinkle with additional curry powder.
  3. Bake at 350F for 40 minutes.
