Ingredients
1 cup Kosher salt
1/4 cup Sugar
1 teaspoon Peppercorns
1/2 wedges Lemon
Preparation
Bring ingredients with 2 quarts water to boil, dissolve. Stir in 2 qts ice water. Add one or two 2.5 lbs chicken. Chill 12-24 hours. Chill in refridge for 3-12 hours uncovered to dry.
