Ingredients

3 T dijon mustard

1 large egg

juice of 1 lemon

1 T Champagne vinegar or whote wine vinegar

1/2 C olive oil

3/4 C canola or safflower oil

Preparation

whisk together the mustard, egg, lemon juice and vinegar in a bowl until well blended. Add the oils in a slow, steady stream whisking constantly until incorporated.Season w S &P. it will be creamy. refrigerate in airtight container.
