Ingredients
2.5 cups all-purpose flour
1/3 cup finely chopped crystallized ginger
1.5 tsp ground ginger
1/2 tsp baking soda
1/2 tsp salt
2 sticks (1/2 lb) unsated butter, softened
1.25 cups sugar
1 large egg yolk
1tsp pure vanilla extract
Preparation
- Whisk flour, both gingers, baking soda and salt in a medium bowl. set aside 2.Beat butter and sugar at high speed until fluffy. Add vanilla and egg yolk and beat until creamy 3.Beat in dry ingredients, half at a time, at medium low speed.
- Divide dough in half, flatten into disks and refrigerate 15 minutes. 5.Roll out dough to 1/8" on floured surface. cut with 2" biscuit cutter. Arrange rounds on large baking sheets, 1" apart. 6.Bake cookies at 350degrees for about 20 minutes until golden. Let cookies cool on sheets for 5 minutes then remove to cooling racks.
