Ingredients

1 pound Duck Breast

Preparation

Set oven to 425

Wash and pat dry breasts

Score fat side of breasts

Add salt and pepper

Place on cold non-stick pan, then medium-high heat, fat side down.

Leave for about 5-6 minutes. Plenty of fat will form. Allow fat to get golden brown

Transfer to oven, skin side up

Cook for about 10 minutes for a nice medium / rare; add 2-3 minutes for more well done
