Ingredients

2/3 cup unsalted butter, softened

3/4 cup superfine sugar

3 large eggs, at room temperature

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/4 cup unsweetened cocoa powder

pinch of salt

FOR THE BUTTERCREAM

2/3 cup unsalted butter, at room temperature

2 3/4 cups confectioners sugar, sifted

2 tablespoons milk

Preparation

  1. Preheat your oven to 375 degrees F. Line a 12-cup muffin with paper muffin liners. To make the cakes, put the butter and superfine sugar into a large bowl. Crack in the two eggs and add the vanilla extract. Sift together flour, baking powder, cocoa powder, and a pinch of salt.
  2. Beat the ingredients together using a hand mixer. Then divide mixture among the liners. Bake for 15-20 minutes until firm. Put a toothpick into the center
