Ingredients

1lb ground beef

1/2 c chopped onion

1 t minced garlic

16 oz jar tomatilo salsa

1/4 c cilantro

6 oz box of Mexican rice

8 oz fiesta blend cheese

20 oz package of burito-size tortillas

10 oz can of enchilada sauce

Preparation

In a large skillet, combine beef, onion, and garlic; cook over medium heat until beef is browned and crumbly. Drain. Stir in salsa, celantro, cooked Mexican rice, and 1 cup of cheese. Spoon mixture into tortillas, rool up, and seam side down in a sprayed 13x9 baking dish. Top with enchillada sauce and bake for 30 min. at 350 degrees in the oven. Sprinkle with remaining cheese; bake for 5 more minutes.
