Ingredients
1 cup pure pumpkin (1/2 15 oz. can)
1 cup whole wheat flour
1/2 cup splenda
1/2 cup cinnamon applesauce (no sugar added)
1/4 cup egg white substitute
1/4 cup chocolate chips
3 teaspoon cinnamon
1 teaspoon baking soda
Preparation
- Mix dry ingredients together first, then add pumpkin and applesauce.
- Preheat oven for 350 degrees F.
- Spray muffin tin (3x2) with canola oil or olive oil before spooning mix into each of the six muffin spots.
- Cook for 40-45 minutes, let cool for at least 15-20 minutes after taking out of oven.
