Ingredients

1 cup pure pumpkin (1/2 15 oz. can)

1 cup whole wheat flour

1/2 cup splenda

1/2 cup cinnamon applesauce (no sugar added)

1/4 cup egg white substitute

1/4 cup chocolate chips

3 teaspoon cinnamon

1 teaspoon baking soda

Preparation

  1. Mix dry ingredients together first, then add pumpkin and applesauce.
  2. Preheat oven for 350 degrees F.
  3. Spray muffin tin (3x2) with canola oil or olive oil before spooning mix into each of the six muffin spots.
  4. Cook for 40-45 minutes, let cool for at least 15-20 minutes after taking out of oven.
