Ingredients

2 1/2 lb. peeled & sliced eggplant

1-2 sliced vidalia onions

1 cup(s) seasoned bread crumbs

1 1/2 cup(s) croutons

1 cup(s) parmesan grated cheese

1/2 tsp. black pepper

1 can tomato sauce (15 oz.)

olive oil

Preparation

Peel and slice eggplant. Layer and salt and allow to set for 25 minutes then rinse well. Brush both sides of eggplant with olive oil. Fry 3 minutes each side. In a 2 1/2 qt. casserole dish…Alternate layers of eggplant, onion slices, seasoned bread crumbs, pepper, and parmesan cheese. Pour 1 can of tomato sauce over the top when done layering. Bake at 350 degrees for 1+ hour. Cover with foil if you need to avoid burning the top.
