Ingredients
1 eggplant
1+ jars pasta sauce
provolone - sliced
1 egg, beaten
1/3 cup water
1 1/2 cups breadcrumbs
Italian seasonings
3 Tbsp parmesan
Preparation
Pre-heat oven to 350 degrees. Cut eggplant into 1/4" slices. Dip in egg/water mixture. Coat in mix of breadcrumbs, parmesan, and spices. Fry in oil until golden. Drain on paper towels. In lightly greased casserole dish, layer sauce, eggplant, and cheese - at least 2 layers. Bake 30 minutes.
