Ingredients
Pork shoulder rub
1 pork shoulder
1/4 cup ground black pepper
1/4 cup paprika
1/4 cup brown sugar
2 tablespoons kosher salt
2 teaspoons dried mustard
1 teaspoon cayenne pepper
Carolina Mustard Sauce
1/2 cup yellow mustard
1/2 cup honey
1/4 cup brown sugar
1/4 cup cider
1.5 teaspoon coarse black pepper
Preparation
Combine the dry ingredients in a bowl then rub and press into pork shoulder. Cook on low in slow cooker for 12 hours.
Boil sauce ingredients for 10 - 15 minutes.
