Ingredients

1 large egg

1/2 cup Milk

1 pound Cod

1/3 cup GF flour

1/3 cup Cracker meal

1/4 teaspoon Cayenne

1 kosher salt

1 tablespoon Dijon Mustard

Preparation

Whisk the egg and milk and mustard in a bowl, add the cod and set aside to soak

Mix the flour, cracker meal, salt and cayenne in a separate bowl and set aside

When ready to cook, heat oil in heavy pan over medium-high heat.

Remove the fish from the milk mixture and dredge all sides in the flour mixture.

Fry in oil for 2-4 min. per side.
