Ingredients
Brown Rice, 1 cup cooked
1 Tbsp olive oil
4 green onions, minced
4 cloves garlic minced
12 oz jar artichokes, drained and chopped
1 large tomato, diced
1 tsp basil
1/4 tsp red pepper flakes
black pepper
4 large peppers, tops and seeds removed
Crumbled feta cheese, 8 teaspoons
Preparation
Preheat oven to 375
Saute garlic, green onions, artichoke, tomato, basil, red pepper flakes, and black pepper until heated through. Stir in rice and remove from heat.
Alternate spooning feta and filling into each pepper until peppers are full. Place peppers in glass baking dish.
Bake about 15 minutes.
