Ingredients

3 cloves Garlic

1 Cooking onion

2 pounds Lean bacon

2 tablespoons Olive oil

2 tablespoons Basil pesto

1/2 cup White wine

28 ounces Plum tomatoes (blended)

2 stalks Celery

2 Carrots

1 cup Cream

1 pound Fettucini

Preparation

In saucepan or braiser, combine first 5 ingredients and saute on medium heat.

When bacon is mostly cooked, add white wine, cover, and allow wine to be absorbed for 10 minutes.

Remove lid. Blend tomatoes, carrots and celery in food processor, and add to saucepan. Simmer uncovered for 45 minutes.

Shut off burner. Add cream.

Serve over fettucini
