Ingredients

1 tbsp. olive oil

1 chopped yellow onion

5 cloves chopped garlic

Fresh oregano

Fresh thyme

Zest from lemon

1 cup broth

1 package mixed greens

1 cans beans

Juice from lemon

Fish fillets

Parmesan cheese

Tabasco sauce

Black pepper

Preparation

Heat oil 1 min. Add onion and cook for 5 min. Add garlic, oregano, thyme, and zest, and cook for 2 min. Add broth and bring to a boil. Stir in greens and beans and simmer for 15 minutes. Stir in lemon juice. Top mixture with fish fillets and simmer until fish is cooked through. Serve topped with parmesan, tabasco, and black pepper.
