6 fish fillets (haddock pref.)
3 tablespoons of butter, cut into small pieces
Juice of 2 lemons
6 cloves of garlic, finely minced,
1 teaspoon salt
1 teaspoon freshly ground pepper
½ cup flat leaf parsley, chopped
1 onion, thinly sliced
1 tablespoon olive oil
Sauce
1 ¼ cups tahini
½ cup olive oil
Juice of 1 lemon
1 tablespoon of ground cumin
1 teaspoon salt
1 teaspoon freshly ground pepper
¼ cup toasted pine nuts
Preparation
Preheat the oven to 350 degrees. Place the fish in a baking dish and dot the fish all over with butter. Sprinkle with the lemon juice, garlic, salt, pepper, cumin and parsley. Bake for 15 minutes or until barely done. Sauté the sliced onion in 1 tablespoon of olive oil until translucent and set aside. In a saucepan, stir together the sauce ingredients and simmer over low heat, about 10 minutes. Adjust the seasonings and add a little water for a creamy consistency Remove the baking dish from the oven. Spread the onion slices over the fish, and then pour the tahini sauce over this. Bake at 350 degrees for another 20-30 minutes. Top with pine nuts and serves with garnishes of lemon wedges.
