Fran’s Apple cake
Makes 3 9x9 foil pans
ON BOTTOM THINLY SLICE 6 SPY APPLES IN 3 9X9 PANS (OR 1 9X13 AND I 8X8).
SPRINKLE WITH CINNAMON.
TOP:
6 EGGS, SEPARATED
1 3/4 C. SUGAR, DIVIDED : 3/4 WITH THE EGG WHITES, 1 C. WITH THE YOLKS
BEAT THE YOLKS WITH THE SUGAR TILL LIGHT YELLOW
ADD 3/4 C. OIL SLOWLY AND INCORPORATE.
ADD ZEST AND JUICE OF 1 LEMON AND 2 T. VANILLA
SIFT 1 C. POTATO STARCH OVER YOLK MIXTURE AND FOLD IN.
BEAT THE WHITES TILL SOFT PEAKS HOLD, THEN ADD SUGAR SLOWLY TILL YOU CAN’T FEEL ANY GRIT WHEN YOU RUB SOME OF THE WHITES BETWEEN YOUR FINGERS.
FOLD THE WHITES AND THE YOLK MIXTURE TOGETHER GENTLY.
POUR OVER THE APPLES.
SHAKE PAN TO SET.
BAKE @ 350 FOR 45-60 MIN.
